This dram matured for almost nine years in American ex-bourbon barrels, before being lovingly finished in hogsheads made from Haute-Garonne sourced French oak for 18 extra months. Bottled at 48% abv, this liquid is free from chill filtration and has natural colour.

On the nose, we encounter bursts of orange zest, honey and baking spice and followed by hints of caramelised stone fruits. The taste profile consists of waves of honeysuckle, cinder toffee and chocolate espresso, leading into notes of grapefruit and earthy tannins. On the finish, a delicate ginger flavour lingers on.

The expression spent a decade maturing and has undergone a finish in a Pedro Ximenez cask. Just 257 bottles were filled at 54.2% abv.

Made from the Bordeaux region’s rare white grape, Sauternes is a celebrated French dessert wine made sweet by the ‘noble rot’, which dehydrates the grapes and concentrates the sugars. Created by Master Distiller, Billy Walker, this GlenAllachie dram was has drawn from four cask types, Mizunara virgin oak, American virgin oak, Oloroso Sherry, and Pedro Ximénez Sherry, to produce this 35-year-old expression. The inclusion of Mizunara oak, sourced from 200-year-old Japanese trees, sets this whisky apart, lending it depth and complexity.

Bottled at 50.2% ABV without chill filtration or added colour, this dram is full of mocha notes, crystallised cinnamon, treacle tart, cocoa, and toasted hazelnuts on the nose, with cocoa, baking spices, chocolate-coated raisins, coconut, brandied orchard fruits, and honeycomb on the palate.

The nose is aromatic with cracked black pepper and freshly cut grass. The grass from the nose continues alongside sweet notes of thick toffee and crisp apples before leading into the satisfying and herbal finish.
