Palo Cortado is the rarest style of Sherry, prized for combining the crisp dryness of Fino with the rich, nutty depth of Oloroso – which is why you should be paying attention to this limited-edition number from GlenAllachie!
Part of their Wood Collection, the release was aged before being finished in Palo Cortado Sherry puncheons and hogsheads, and finally presented at 48% abv. On the nose, expect warming cinnamon spice, butterscotch and damson plum, lifted by heather honey and crystallised ginger. The palate delivers toasted honeycomb, fresh brambles and baking spices, evolving into maraschino cherries, mocha and plum jam, with a long, indulgent finish of treacle and dark chocolate. With no colour added and non-chill filtered, every drop of this remarkable whisky is presented exactly as nature intended.
