    Introducing Highland Park’s ‘Between You and I’, a new collection that turns traditional whisky tasting on its head. Rather than dictating flavours, this series invites whisky lovers to create their own personal notes and share the memories, music, and moments the whisky brings to mind.

    The debut expression is a 16-year-old single malt created in collaboration with Michelin-starred chef Björn Frantzén. Matured in a distinctive combination of virgin Swedish oak, sherry-seasoned American and European oak, and a select number of ex-bourbon casks, it is bottled at 48% ABV.

    Inspired by Björn’s own tasting journey, memories of Nordic forests, the crackle of a winter fire, and the rhythm of favourite rock songs, this release celebrates creativity and connection. ‘Between You and I’ invites each drinker to discover their own story in every dram.

    Inside this release, you’ll find a booklet that contains a first-person account from Björn of his experience tasting the whisky and what it evoked for him. The second half of the booklet contains an interactive question game that invites you to develop and share your own personal tasting notes.

    Expect aromas of honey, caramel, and heather, along with sweet flavours of orange, milk chocolate and raisins which pair beautifully with soft peat smoke. The finish is long, satisfying and waxy.

    The nose has dark brown sugar, dark chocolate, and black cherries. The palate is aromatic and sweet with candied orange peel and toasted oak before leading into a finish full of peat smoke, baking spices, and coffee.

    Highland Park have unveiled their oldest whisky to date. Aged for an incredible 56 years, this rare and visually striking release is limited to just 170 bottles globally. Highland Park 56 Year Old, crafted over more than five decades, boasts a unique harmony of complex flavours between jasmine, raisin, cloudy honey and delicate peat smoke. Bottled at a natural strength of 47.1% abv, and free from chill filtration.

    In 2008 Gordon Motion selected ten special casks, first laid down in 1968, that contained whiskies of an unusual flavour profile—both complex and intriguingly ethereal—that showed potential for further ageing. To further develop the flavour of each of these casks, he decided to marry and re-rack them in a series of first-fill sherry-seasoned Oak casks. The 56 is made entirely from one of these casks, a never-before-tasted, sherry-seasoned, first-fill American Oak Puncheon that became ready for bottling in 2024.

The top notes are maritime (sea salt, old varnished wooden boat, cordage) and mineralic (chalk), backed by a faint note of green apples and a thread of smoke. A mouth-filling texture and a sweet, salty, faintly peaty taste, with a spicy finish.

    Bottled at 64.3%, this Highland Park expression comes to us straight from the cask. The spirit has been matured in majority first-fill European oak sherry casks, along with some first-fill sherry seasoned American oak casks, refill casks, bourbon casks and – for the first time – port casks. 

    Aromas of toasted coconut, crushed lemons and cedarwood are complemented by Turkish Delight tinged peat smoke on the nose, before an intriguing palate of zesty pink grapefruit and fragrant rose water. Earthier suggestions of toasted oak and heather-rich peat reveal themselves, while the long finish brings exotic sun-baked spices and a ribbon of liquorice running through the final breath of floral peat smoke.

    Matured for over three decades and bottled in 2023, this magnificent Highland Park expression was first matured in just four American oak bourbon hogsheads before spending its final 11 months in a pair of European oak hogsheads. Each of the 625 bottles are hand-numbered and come in a luxurious leather-lined white oak box with a certificate signed by master whisky maker Gordon Motion. 

    Expect notes of citrus zest and dried apricots, summer jasmine and lavender, scorched vanilla fudge, sherried raisins dusted with cinnamon, fragrant violets, crushed fennel and coriander seeds, aromatic peat smoke.
