Kilchoman 100% Islay
$83.00 Availability: In StockEstablished in 2005, Kilchoman is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. Kilchoman gives everyone the chance to see what is best about the grass-roots traditions of malt distilling. As well as being one of only a handful of distilleries still practicing floor malting, a percentage of their own barley is grown at the distillery, completing all parts of the production process at the distillery – from barley to bottling – called the Kilchoman 100% Islay. The 100% Islay range is what Kilchoman is all about. Kilchoman is based on a farm and 100 tonnes of Barley is grown in the fields surrounding the Distillery. The 100% Islay is a lighter and fresher whisky with citrus flavours which are distinctive to Kilchoman’s new make. -
Kilchoman 100% Islay 10th Edition
$75.00 Availability: In StockKilchoman 100% Islay does exactly what it says on the tin; this expression offers a unique single malt produced entirely on Islay, on one farm, from barley to bottle. 100% Islay is the only whisky in Scotland that can claim this.
The tenth release was distilled from barley varieties grown at Kilchoman in 2007, 2009 and 2010, before being matured in a combination of 39 bourbon barrels and 2 oloroso sherry butts for a minimum of 9 years. Bottled in 2020 at 50% ABV and 20ppm, just 12,400 bottles have been produced, with each cask personally selected for the release by distillery founder, Anthony Wills.
The nose has sweet and citrusy notes, followed by autumnal flavours of baked apples and pears and cinnamon on the palate. Mildly spiced peat smoke fills the palate and lingers on in the finish.

Kilchoman 100% Islay 11th Edition

Not happy with just being from Islay, this innovative farm distillery do every step of the whisky-making process on the island. Using barley grown on the island, they then mature the spirit in a mixture of ex-bourbon and ex-Oloroso sherry butts. The 11th edition of this single malt, this is free from chill filtration and has a natural colour.
Vanilla ice-cream, dried spices, floral notes and dried fruits all harmonise on the nose. Malty bread, cinnamon, ginger, and baked apples appear on a sweet palate. The finish is rich, with a new twist of peat smoke and orange peel.

Matured for a minimum of nine years, the whisky was bottled on site at 50% abv. Free from chill filtration and at natural colour.
Aromas of campfire smoke, citrus peel, and tropical fruits lead to a palate of creamy caramelised sugar, vanilla, lemon, pineapple, ginger and oak smoke. The finish is oily and textured with sherry notes and lasting peat smoke.

Bottled at its full strength of 50% abv, the nose presents bright notes of orange peel and dried fruits, lifted by gentle peat smoke and soft sweet spices. The palate unfolds into rich smoke layered with dark chocolate, honey, cooked apples, and a warming malty sweetness. The finish is long and expressive, characterised by grilled fruits, plums, and currants, with a lingering thread of wood smoke that speaks to its slow sherry cask maturation.

Kilchoman 11 Year Old Founders Cask Calvados Double Cask Finish
$119.00 Availability: In StockThe fifth and final release in the Founders Cask series by Kilchoman, this special release was chosen by the founder’s youngest son, Peter Wills. The expression was matured in two separate bourbon barrels for over 9 years, before being treated to a finish in a single Calvados cask for more than 2 years. Bottled at 54.8% abv, with just 517 bottles produced.
Expect a combination of ripe apples and pears and peat smoke on the nose, before a palate of spiced apple pie, honey, citrus and subtle smoke. Kilchoman’s signature briny tang comes through in the notably sweet finish.
