Description
The Kilchoman 100% Islay Sherry Cask Matured release is a true ‘farm-to-bottle’ expression, crafted entirely on the distillery’s own Islay estate. Distilled from the 2011, 2012, and 2013 barley harvests and matured for a minimum of 11 years in 16 hand-selected ex-Oloroso sherry butts, this edition showcases a deep sherry influence.
Bottled at its full strength of 50% abv, the nose presents bright notes of orange peel and dried fruits, lifted by gentle peat smoke and soft sweet spices. The palate unfolds into rich smoke layered with dark chocolate, honey, cooked apples, and a warming malty sweetness. The finish is long and expressive, characterised by grilled fruits, plums, and currants, with a lingering thread of wood smoke that speaks to its slow sherry cask maturation.
