Kilchoman Maury Cask Matured
$70.00 Availability: In StockA genuinely rare release, this limited edition Kilchoman has been fully matured – not just finished – in ex-Maury fortified wine casks from the Roussillon region of southern France. Made predominantly from Grenache noir grapes, Maury is a rich, sweet fortified wine, and its influence here is unmistakable, giving the liquid a deep crimson colour.
Bottled at 50% abv, expect a nose of dates, raisins, fig jam, dark honey, and treacle on the nose, with gentle peat smoke, orange peel, toasted oak, and a whisper of black cherry and cocoa beneath. On the palate, waves of molasses, sultanas, and stewed berries meet Kilchoman’s signature earthy peat smoke, whilst marmalade, liquorice, and spiced oak add satisfying depth. The finish is long and indulgent with peat smoke wrapped in dark fruit and sticky toffee, with a final flourish of orange zest and soft oak spice.

Kilchoman PX Sherry Cask 2023
$94.00 Availability: In StockThis limited edition single malt from Kilchoman is their first to be fully matured within Pedro Ximénez sherry casks. The whisky has been aged for a minimum of five years in casks previously used by Bodega José y Miguel Martin, Jerez, Spain. With an outrun of 23,000 bottles, the liquid has been bottled at 50% abv.
On the nose, expect aromas of sweet sultanas and raisins with rounded peat smoke, layers of liquorice and hints of citrus sweetness. The palate brings brown sugar, malty sweetness, orange peel, dark chocolate and waves of sherry before a finish of chocolate coated raisins, oak smoke and lasting PX sweetness.

The whisky itself is matured in both sherry casks and bourbon cask but takes most of its influence from the sherry cask that it ages in. This gives the whisky a deep rich fruit cake flavour that balances incredibly with the pure Islay peated smoke of the Kilchoman spirit.
The nose is fragrant with hints of heather, raisins and mixed spices with and overhanging scent of peat smoke. The Palate is rich with over ripe fruit and berries that work along side flavours of dark chocolate and toffee to create a balanced malt. Kilchoman STR Cask Matured
$78.00 Availability: In StockCreated with Shaved, Toasted and Re-charred casks, this single malt from Islay’s Kilchoman is limited to just 14,500 bottles worldwide. Distilled in 2012 and matured in 43 hogsheads that had been treated by the STR process, this expression was bottled in 2019 at a strength of 50% abv free from chill filtration and artificial colouring.
The nose is very fruity with a hearty cinnamon spice and gentle peat smoke. The palate brings soft caramel and layers of red berries, lemon citrus and earthy peat smoke, before a long and spicy finish with honey and caramel adding balance.
