    This single cask Dalmore is from the Platinum Old & Rare series of very limited single malts from Hunter Laing & Co. bottled exclusively for The Whisky Shop. Distilled in 1991 and bottled in 2021, this 29-year-old is left free from chill filtration and at a natural cask strength of 55.7% abv. Limited to 136 bottles.

    There are rich and oaky aromas at first revealing fresh green tea with a touch of malted barley and pot ale – smells you often pick up whilst touring a distillery. It reveals a lot of sweeter notes over time with candy floss, fresh fruit jams and jelly sweets.

    The flavours in this one on the palate are herby and nutty with sesame seeds, indian herbs and spices, more green tea, hazelnut, molasses and bitter dark chocolate – all making for a complex and intriguing dram. It has a fairly dry finish continuing on that herby theme with good oak and a touch of earthiness.

    This 2022 bottling of The Dalmore 30 Year Old single malt has been matured in ex-bourbon casks and finished for two years in tawny port pipes, which previously held Graham’s 1982 Single Harvest Tawny Port. Presented in a stunning bottle, with a abv of 43.2%.

    Expect aromas of stewed apples and plums, treacle, ginger and cherry on the nose, followed by a palate full of dark berries and cherries and port wine. The finish develops into notes of espresso, soft liquorice, orange and dark cocoa.

    The 2023 release of Dalmore 30 Year Old is something to behold. The liquid has been matured in bourbon barrels, before a final flourish imparted by a selection of rare Port pipes. One of these had previously held a Graham’s 1982 single harvest Port, alongside other rare single harvest expressions. Presented at 43.8% abv.

    The nose holds aromas of dried fruits and dark chocolate, which lead to a palate full of rich mocha, juicy plums and orange zest that mingle with nutty marzipan and aniseed on the finish.

    This 40 year old Highland single malt began its life at The Dalmore distillery in American white oak ex-bourbon casks before being transferred to 30 year old Gonzalez Byass Matusalem oloroso sherry butts. After seven years in these rare casks, the liquid was given its final flourish in first-fill American white oak bourbon casks prior to bottling.

    Rich Colombian coffee mingles with sweet sultanas, dates and marmalade on the nose. The palate reveals gingerbread, molasses, maple syrup and brioche dipped in Manuka honey. The finish has delicious blood orange, over ripe Bramley apples, liquorice and notes of desiccated coconut.

    This 2024 edition was initially matured in American white oak bourbon casks, before being transferred into 30 year old Matusalem oloroso sherry casks. This precious liquid was then blended with spirit which was matured in American white oak bourbon casks and then Graham’s Port Colheita casks from 1970, creating a whisky which is indulgent, smooth and complex. Bottled at 42%, the single malt is presented in a luxurious display case.

    On the nose, there are aromas of cherries, plums, sultanas, toffee apple and vanilla beans. The palate shines with notes of orange peel, chocolate truffles, marmalade, and crushed walnuts, before a finish of black forest fruits, poached pear, caramel and dark chocolate.

    This Highland single malt from The Dalmore has been crafted by Master Distiller, Richard Paterson, using some of the distillery’s rarest and most exceptional whiskies. Matured in American white oak ex-bourbon casks before spending five years in 1961 and 1963 vintage Colheita port pipes, the whisky is then married together and finished in first-fill American white oak ex-bourbon casks. The result is a 45 year old single malt that is smooth and complex with a tremendous finish.The nose has rich molasses and toffee, with treacle cake and blood oranges, almonds and fresh coffee. The palate has a soft liquorice note alongside red berries, hazelnuts and dark chocolate, all dripping in Manuka honey. The finish has Bramley apples and juicy dates lingering.

    Presenting The Dalmore 45 Year Old 2024 release, an assemblage brought together by The Dalmore Master Distiller, Richard Paterson, created using some of the distillery’s most rare and exquisite casks. Initially matured in American white oak ex-bourbon casks, the whisky then matures in Cabernet Sauvignon barriques. It is transferred back into American white oak ex-bourbon casks before maturing in Tawny port pipes which have held 20 year old port for the penultimate stage. The precious liquid is then married together with aged whisky matured in American white oak ex-bourbon casks and aged Port. Bottled at 40% abv, and presented in a spectacular display case.

    Freshly roasted coffee beans on the nose, with a palate of succulent figs, toffee apple and ripe banana. English marmalade and Manuka honey on the finish, alongside whispers of cranberries.

    This 51-year-old single malt Scotch has been crafted by Dalmore for release in the distillery’s 180th year, and the first release of the new decade. Beginning life in ex-bourbon casks, before being split into prestigious Port Colheita 1938 casks, Matusalem sherry casks and first fill bourbon casks, this expression received a final flourish in specially selected bourbon barrels before being bottled. Presented in a beautifully crafted crystal decanted adorned by a Sterling silver Royal stag and crowned with a custom crystal stopper, just 51 bottles of this limited edition have been created.

    The nose is luxurious with liquorice, Napoleon cake, black morello cherries, marmalade, and hints of Oloroso sherry atop notes of coffee, fruit cake, manuka honey, and pears soaked in tawny port. The palate has juicy El Dorado plums, raisins, ginger cake, Demerara sugar and vanilla pod. The finish brings sweet notes of sultanas, hot chocolate, treacle and pineapple.

    An exceptionally well-crafted single malt from The Dalmore created in collaboration with architect Kengo Kuma and protégé Maurizio Mucciola. This expression has spent 15 years in a combination of Italian Amarone red wine casks, bespoke virgin “Kintsugi” casks that have been crafted from the Tay, and Japanese and American white oak before being bottled at 46.8% abv without chill filtration or added colouring. Highly limited, just 15,000 bottles have been produced.

    Expect warming and inviting aromas of citrus zest, raspberry jam, and baked figs on the nose. The notes of fig continue in the palate alongside sumptuous hints of cacao and candied orange peel before leading into a finish full of dark chocolate, honey, and dried fruits.
