    With exacting precision, Ailsa Bay takes distilled whisky craft and innovation to a whole new level. perfectly balancing smoke and sweet flavours through a new-age maturation process known as ‘micro maturation’ or ‘cask starting’.

    In this unique process, perfected by experimental Master Blender Brian Kinsman, the single malt is first aged in small traditional bourbon casks (sourced from Tuthilltown Spirits in New York) for six to nine months, to rapidly and intensely mature. The liquid then spends several years in virgin, first-fill and refill American oak casks to develop its multi-layered flavours.

    Nose: Fresh wood smoke with notes of smouldering damp heather and an extinguished bonfire. Following the smoke is a wave of oaky sweetness and hot buttered toast with an intriguing hint of caramelised apple.

    Taste: An immediate punch of peat is quickly balanced by a burst of vanilla oakiness. The flavour meanders between smoke, fruit, creamy toffee and back again.

    The new and luxurious ‘Heritage’ by Alfred Giraud blends together three unpeated French malt whiskies. For Heritage, these malts are matured in different casks: most having previously contained old cognacs, new French oak casks from Limousin, and new American oak casks. The blend is then aged exclusively in barrels that previously contained very old cognacs. The whisky is then bottled at 46.1% abv without chill-filtration.

    Aromas of flaky, buttery pastries and brioche fill the nose, with toasted malts and baking spices making their way in. Complex yet balanced, this whisky is full-bodied and appears to be more woody and grassy on the palate, balanced with vanilla and nutmeg. A subtle finish, the soft spices and sweet notes from the old Cognac casks linger on.

It is fermented and distilled before spending two years maturing in French oak casks, then blended with cream.

    Amarula Cream is a pure blend of nature’s fresh cream and the mysterious taste of the wild marula fruit. Africa’s majestic elephants walk for miles to feast on the sun-ripened marula fruit which is indigenous to the region’s vast subequatorial plains.

    The hand-picked marula fruit is fermented, distilled and matured for two years in French oak before being blended with the finest fresh cream.

    The Knockdhu Distillery, in Knock in Aberdeenshire, although on the border of Speyside, is a Highland whisky, a fact that perhaps delivers a surprise when tasting anCnoc. It produces a light, intriguing and thoroughly modern whisky to this day. Wholly maturing anCnoc whiskies in American bourbon casks allows the characteristic intense citrus notes to shine through.

    anCnoc 16 year old has been bottled in its most natural form at 43%abv as it is neither chill-filtered nor coloured. As a result, it may develop a light haze with the addition of water or if kept at a cold temperature. This haze is a natural characteristic of whisky that is non chill-filtered.
