Created by Master Distiller, Billy Walker, this GlenAllachie dram was has drawn from four cask types, Mizunara virgin oak, American virgin oak, Oloroso Sherry, and Pedro Ximénez Sherry, to produce this 35-year-old expression. The inclusion of Mizunara oak, sourced from 200-year-old Japanese trees, sets this whisky apart, lending it depth and complexity.

Bottled at 50.2% ABV without chill filtration or added colour, this dram is full of mocha notes, crystallised cinnamon, treacle tart, cocoa, and toasted hazelnuts on the nose, with cocoa, baking spices, chocolate-coated raisins, coconut, brandied orchard fruits, and honeycomb on the palate.

Distilled at The GlenAllachie in Speyside, this single malt has been independently bottled by That Boutique-y Whisky Company as part of their Boutique-y Records Series. Matured for ten years, this expression was finished in a Maker’s Mark ex-bourbon cask before just 460 bottles were filled at 54.2% abv.

The nose is aromatic with cracked black pepper and freshly cut grass. The grass from the nose continues alongside sweet notes of thick toffee and crisp apples before leading into the satisfying and herbal finish.

 Cask #1426 is a single oloroso sherry hogshead filled in 2009 and left undisturbed for 17 years, giving it plenty of time to develop the kind of depth and complexity that can’t be rushed or replicated.

Bottled at 53% abv, the final result is all rich dried fruits, warming spice, and that deep, velvety sweetness that only a well-chosen oloroso cask can deliver. With only 356 bottles in existence, this is a genuinely rare find.

Released as part of the eighth batch of UK exclusive single casks, this expression has spent a long 12 year slumber in a single Oloroso sherry puncheon. Bottled at a robust cask strength of 61.7% abv, the exceptional cask has elevated their signature honeyed spirit to exude Sherried opulence.

Expect aromas of floral heather honey, fruit and nut chocolate, ginger and mixed spices, with hints of coffee and vanilla. The palate bursts with spicy nutmeg, hazelnuts and butterscotch, followed by notes of apple, cocoa and more rich coffee bean on the close.

Released as a part of the GlenAllachie Wine Series, this 11-year-old Speyside single malt has been initially aged American oak bourbon barrels, before being treated to a two-year finish in French oak Cru Classe wine barriques skilfully sourced by Master Distiller Billy Walker. Top of the official Bordeaux wine classification, Premier Cru Classé chateaux are considered to produce wines of the highest quality and flavour. Bottled at 48% abv, free from chill filtration.

Expect waves of butterscotch, blackcurrant and heather honey on the nose, with hints of minerality, poached orchard fruits and orange zest. The palate brings layers of honeycomb, black fruits and dark chocolate, before flavours of crème de cassis and ginger on the finish.

Bottled exclusively for us at The Whisky Shop, this bold Glenallachie expression has been aged for 12 years in a single Pedro Ximenez puncheon. With an outrun of just 699 bottles, this highly limited single malt has been bottled at a huge cask strength of 61.1% abv. Free from chill filtration and at natural colour.

Expect aromas of orange zest, dark chocolate and sticky honeycomb, with hints of cedarwood, vanilla extract and plum jam. Waves of poached orchard fruits on the palate, followed by strawberry coulis, heather honey, treacle, raisin and hazelnut. 

The limited-edition GlenAllachie Wine Cask Series involved Master Blender Billy Walker firstly maturing the spirit in the finest American oak ex-Bourbon barrels, before transferring the whisky into hand-selected European wine barriques for secondary aging. For this Cuvée Wine Cask Finish bottling, Billy blended four exceptional wine cask finishes into one unique expression. The single malt is a marriage of spirit matured in several fine wine casks sourced from Bordeaux, Languedoc and Valpolicella. Bottled at 48% abv, and free from chill-filtration.

On the nose notes of orange blossom, espresso, sweet cherries and honeysuckle dominate with hints of candied stone fruits, hazelnuts, lavender and cinnamon. The palate is full of dark chocolate, red fruits and espresso, followed by candied almonds and blackberries. On the close, ginger and liquorice follow.
