The driest style of Sherry, Fino is notable for its pale appearance. Bottled at 48% abv, the whisky is free from chill filtration and at natural colour.Â
The nose opens with aromas of nutmeg, heather honey and vanilla extract which develop into butterscotch, green apple, stone fruits and roasted almonds. On the palate, lashings of dried apricots, honeycomb and butterscotch mellow into touches of baking spices, marzipan and caramel. Touches of orchard fruits and citrus reveal themselves in the especially satisfying finish.

The darkest dry Sherry style, Oloroso is renowned for its nutty, dried fruit qualities. Bottled at 48% abv, the whisky is free from chill filtration and at natural colour.Â
On the nose, heather honey, mocha and dried apricot notes develop into cinnamon butter, red velvet cake and marzipan aromas. The palate is bursting with initial flavours of dark chocolate, honeycomb and butterscotch, before leading to red berries, ginger and damons with hints of poached apples and muscovado sugar.Â

GlenAllachie 9 Year Old Rye Cask Finish
$53.00 Availability: In StockDistilled at GlenAllachie in Banffshire, Speyside, this single malt Scotch is first matured in premium American oak barrels before being re-racked and finished in bold Kentucky rye casks. Part of Batch 2 in the Wood Finish range from Master Distiller Billy Walker, this 9-year-old expression is bottled at 48% abv.
The nose has cinnamon and nutmeg atop layers of honey, treacle and orange peel. the palate brings intense notes of stewed spices, butterscotch, treacle and orange zest, before hints of clove and rye spice in the lingering finish.

The Chinquapin One has been expertly aged in superior Chinquapin virgin oak barrels sourced from the Northern Ozark Region of Missouri, USA, before being bottled with a phenol level of 35mml and a strength of 48% abv. Free from chill filtration and at natural colour.
Expect complex notes of smoked spices and toasted nuts.

$154.00 Availability: In StockPart of the Old Malt Cask range from family-run independent bottler Hunter Laing & Co. of Glasgow, this Speyside single malt was distilled in March 1995 at Glenallachie distillery. Matured in a single refill hogshead for 21 years, only 229 bottles were charged in February 2017. Presented at a preferred strength of 50% abv.The nose has butter croissants, Demerara sugar and red berries. The palate is silky smooth with liquorice and shortbread notes, before a long and lasting finish with dry oak hints. -
Signatory Vintage Glenallachie 2009 12 Year Old
$109.00 Availability: In StockAn outstanding bottle of The GlenAllachie independently released by Signatory Vintage. This Speyside dram was matured for twelve years in a first fill sherry butt before being bottled in June 2022. Just 288 bottles were filled at a mighty 66.4% abv.Â
Aromas of raisins, sugared almonds, and sweet milk chocolate meet the nose. The palate brings dried fruit, malt loaf, Christmas cake, and cracked black pepper before leading into a sweet and spicy finish full of candied citrus zest. A simply outstanding dram.

There are aromas of fruit juice, lemon zest, soft caramel and fresh grass and flowers on the nose, which lead to a sherry-led palate with touches of fruit pudding, smores, apple pie and white pepper.
