The much-anticipated second release in the Cask Strength series is composed primarily of sherry seasoned European and American oak casks, along with a few ex-bourbon casks. The result is a hearty, punchy dram that has a natural deep gold colour. It is free from chill filtration and bottled at a staggering 63.9% abv.
Aromas of rose petals, ripe pear, and coconut gather on a wave of aromatic peat smoke. The palate is one where a wild harmony is found between sweet poached pear, rich almond cake, cloudy honey, and spiced oak, black pepper, and aniseed. In a luxuriously long finish, this harmony reaches a crescendo with orchard fruits, salty liquorice, and more peat smoke. This deep gold expression is a characteristic Highland Park, full of character.

This unique expression, which has notes of heather honey and aromatic smoky peat, is an exclusive to The Whisky Shop, allowing those unable to attend the annual event – as well as those who loved it so much they want more – the opportunity to purchase it to enjoy at home. Valfather has been crafted with 100% refill casks and bottled at 47% abv.
The nose is fruity, with crisp apple and sweet pear notes. The palate brings creamy vanilla and creme brulee with toasted cedar wood and a touch of paprika spice, before a long and floral finish with wisps of Highland Park’s heather peat smoke.

Valknut takes its name from the Norse symbol of three interlinked triangles, meaning ‘knot of those killed in battle’, which was placed upon fallen Viking warriors before they would be spirited away to Valhalla to join Odin’s army. Highland Park Valknut has been matured predominantly in sherry seasoned American oak and used a small amount of Orkney-grown Tartan barley, which adds a smokier edge to the character.The nose has toasted vanilla, cracked black pepper, cloves and aniseed with an aromatic smoke. The palate is sweet with aromatic cloves and tangy aniseed hints. The finish is incredibly balanced, with lingering peat smoke and sweet spice. -

Each of the 625 bottles are hand-numbered and come in a luxurious leather-lined white oak box with a certificate signed by master whisky maker Gordon Motion.
Expect notes of citrus zest and dried apricots, summer jasmine and lavender, scorched vanilla fudge, sherried raisins dusted with cinnamon, fragrant violets, crushed fennel and coriander seeds, aromatic peat smoke.

Hinotori Blended Japanese Whisky 5 Year Old
$59.00 Availability: In StockFrom the Hekinan Distillery comes the Hinotori 5 Year Old, a small-batch Japanese blended whisky crafted with real care. “Hinotori” translates to Phoenix, a fitting name for a distillery that has risen from its ashes after a long pause in production. Founded in 1949, the distillery marked its 70th anniversary with this limited release, created on Honshu from a blend of grain whisky (primarily corn with a touch of wheat) and malt whisky, all matured for five years in new American white oak barrels. Non-chill filtered, it offers a naturally creamy character with a generous helping of vanilla and orchard fruits.
Bottled at 43% ABV, the nose opens with dried apple and pear, alongside almond, vanilla pod, and a subtle hint of dry toast.
