The Octave Ardmore 2010 11 Year Old
$115.00 Availability: In StockThis Ardmore 2010 is completely exclusive to The Whisky Shop. This special bottling is a dram that was chosen by us, and after a taste we think you will be able to see why. This is a peated single malt whisky that lives in the space in-between with multi-faceted flavours. It uses a traditional style of peating that produces a lightly peated spirit. Part of the Octave series, this then spent a final six months finishing period in a tiny octave cask, imparting a great depth of character to the liquid. It aged for 11 years in oak casks, being awoken from its slumber in 2021. A run of just 76 bottles has been produced. We think this spirit captures the essence of what makes Ardmore such a unique and cherished home of whisky. It walks the tightrope between sweet, spicy, and richness superbly. This cask strength dram arrives without chill filtration or artificial colouring.
On the nose one can find aromas of honey, cinnamon spice, and a waft of peat smoke. The palate is full of sweet honey, smoky charcoal notes, creamy vanilla, and vague hints of spicy notes. The finish is full bodied, silky smooth, and wonderfully lingering.

The Octave Aultmore 2008 12 Year Old
$103.00 Availability: In StockAnother excellent find from Duncan Taylor’s Octave range. Distilled in 2008, this single malt was aged in oak casks for 12 years before being finished for 3 months in an octave cask. This allows a much faster rate of maturation, being a very small cask. Another side effect of this is that this is a very small yield of only 85 bottles. This Speyside whisky is bottled at cask strength, 52.5% abv, and has a natural colour that has been free from chill filtration.
Expect earthy notes on the nose, with tobacco, cigar box and sherried oak. On the palate is cinnamon, ginger, toffee popcorn, and maple syrup. Clove, freshly cut grass and malty cereal all combine wonderfully on the finish, which gives more and more as it develops.

The Octave Bunnahabhain Peated 2014 6 Year Old
$79.00 Availability: In StockExclusively bottled for The Whisky Shop, this Bunnahabhain 2014 peated single malt is an exemplary dram from the Islay distillery. Aged for six years in oak casks, what makes this a standout expression is a three month flourish in an octave cask. Only 50 bottles have been yielded from this process, and all come at a punchy cask strength of 53.6% abv. The finish in an octave is important, as this type of cask contains about 1/8th of a butt, meaning there is a lot more interaction between the whisky and the oak cask. It is free from chill filtration and any artificial colouring.
Peat smoke combines with rich fruit notes on the nose, and the palate gives subtle hints of brown sugar, toasted almonds, liquorice, and rich fruit. The finish is sweet and peaty, with notes of highland toffee and tablet arriving in a luxurious texture. A fascinating dram.
