DRAM5 Vol. 1 takes whisky lovers on a journey of discovery.

‘The Spirit of Belfast’: Dunville’s was recently revived by Elchinville distillery. This 10 Year Old was aged in Pedro Ximenez sherry casks and bottled at 46% abv. The liquid is presented in a spectacular bottle with a vintage design, harking back to the glory days of Dunville’s whiskey. Free from chill-filtration. 

Expect aromas of tarte tartin, calvados caramel creme and dark fruit compote on the nose, leading to a palate of candied oranges, fruit salad, and sherry-influenced fig and stewed date flavours. On the close, clean malt is mixed with vanilla and spices, with PX sherry flavours on the tail.

This 2012 vintage Edradour single malt was carefully matured for 12 years in first-fill Pinot Noir casks from the prestigious Michael Eppan winery. The result is a whisky that harmoniously combines Edradour’s signature richness with the delicate fruitiness and soft tannins of Pinot Noir. Bottled in January 2025 at 48.2% ABV, this limited release of just 1,422 bottles is unchill-filtered to preserve its full depth of flavour.

You can expect a nose of wild berries and subtle baking spices, following on to a palate bursting with toffee, orchard fruits, red berries and oak. The finish is smooth, silken and long with lingering berry notes.

Colonel E.H. Taylor Jr. is often regarded as a founding father of the US bourbon industry and this small-batch bourbon is crafted by Buffalo Trace distillery in tribute. Made by hand and matured in century-old warehouses built by Taylor, this expression is bottled at 50% abv.

The nose is sweet and inivting. The palate is sweet with caramel, corn and butterscotch with a touch of liquorice. The finish is smooth and subtly spiced with pepper and tobacco leaf.

Matured for 12 years and bottled straight from the barrel at 125.6 Proof (or, 62.8% abv), experience Elijah Craig at purest. Each bottle of the Kentucky Straight Bourbon Whiskey is hand-labelled with its unique proof and batch number. 

A punchy nose, with spicy rye, damp oak and aged leather, leads to a rich palate of vanilla bean, milk chocolate and cinnamon spice.

This is a non-age statement bourbon created from spirit aged between eight and twelve years. A small batch expression, this one from Elijah Craig replaces their much-loved 12-year-old. Lots of roasted nuts on the palate, with sweet vanilla, dark fruits, coconut and caramel. Works great in an Old Fashioned.

Made by the Spirit of Yorkshire distillery in God’s Own Country, this single malt is the culmination of their bourbon-matured style. The approachable whisky was crafted using 100% homegrown barley, and has been bottled at 46% abv, free from chill filtration and at natural colour.

Expect notes of vanilla and caramel on the nose, with flavours of honey and citrus shining on the palate.
