Cork Distilleries Company was very proud of the strong reputation which its whiskey had earned and wanted to prevent any fluctuation in whiskey quality due to bonder underhandedly diluting the casks. Thus the company was one of the first to bottle their whiskey, which became known as Paddy. Paddy Whiskey is distilled three times from the finest quality barley and water. This ensures a whiskey, which is particularly light, well balanced and pure. Its relatively low pot-still content and uniquely high proportion of malt whiskey, ensures Paddy is one of the softest of all Ireland’s whiskeys. -
Paul John Christmas 2025 Edition

Produced at the Goa-based distillery in India, this limited edition was crafted from unpeated malt, maturing for five years in bourbon casks before undergoing a second maturation in cream sherry casks.
After two years, the whisky is vatted together for a further year, before finally being bottled at 48% ABV, perfectly natural, it is non-chill-filtered and contains no added colouring.
On the nose, it opens with rich aromas of dried fruits, creamy toffee and festive spices, followed by notes of dark chocolate, honeyed malt and a gentle oak warmth. The palate is full and rounded, offering flavours of raisins, figs and sweet sherry, balanced by vanilla, roasted nuts and soft baking spices. The finish is long and satisfying, with lingering notes of cocoa, gentle sweetness and a warming, spiced dryness that suits the season perfectly.

Rabbit Hole Heigold Kentucky Straight Bourbon

The Louisville-based distillery have released a sweet high rye whiskey that has been matured in slowly-toasted barrels before being bottled at 47.5% abv. The expression is free from chill filtration. The name “Heigold” is in reference to Christian Heigold, a German stonecutter who came to Louisville in the 1850s. Enjoy this whisky neat or over ice. Riverbourne 2 Year Old Batch 2 That Boutique-y Malt Company Return To Oz
$99.50 Availability: In StockA part of That Boutique-y Whisky Company’s Return to Oz collection showing off the best of Australian whisky, this single malt hails from Riverbourne distillery – located 60km southeast of Canberra. The expression was crafted using heavily peated malt from Bairds, and was matured for two years in an 100 litre cask made from recycled, charred oak wine staves. On the bottle, the deadly animal chosen to represent Riverbourne is the common death adder. It observes a whack-a-wombat session by the distillers, which is a reference to the destruction that local wombats cause in and around the distillery. Bottled at 51% abv.
Expect aromas of earthy yet medicinal iodine, together with heather honey and hints of tangerine creams. The palate is a bold one, opening up with waves of sweet smoke, candied citrus and vanilla toffee and closing with earthy peat and a pinch of salt.
