Lindores Abbey Aqua Vitae

The new distillery on the ancient site crafts this unique spirit drink in tribute, using pot still spirit infused with herbs and spices grown in the gardens of the Abbey. Bottled at 40% abv, this expression is completely natural with no added sugar.
The nose is light and fruity, with the palate bringing rich caramel sweetness alongside peach and pear notes, before a cinnamon and ginger spice in the long and lingering finish.

This is a lowland single malt whisky from the Lindores Abbey Distillery, which has been given a new lease of life in 2017. This Lindores single malt is bottled at the distillery with the unique limited edition strength of 49.4% abv, having spent its maturation in ex-bourbon casks. This was aged for three years, and hails from the officially recognised site of the first recorded distillation of Scottish whisky, back in 1494.
Toasted oak, pears, barley, butter, and vanilla arrive on the nose. The palate has notes of dark berry tart, festive spices, vanilla, and tartness. The finish is sweet, with lingering flavours of apple, pear, oak, and peppery spice.

Lindores Cask of Lindores 2 STR Barriques
$60.00 Availability: In StockThe second in their Casks of Lindores series, this bottling has been matured solely in STR Red Wine Barriques from Spain and Portugal. Bottled at a natural strength of 49.9% abv, this non-age statement expression is aged for a minimum of 4 years and 8 months – this being the youngest liquid in the marriage. Natural colour and free from chill filtration as always by Lindores.
The nose opens mellow and fruity with notes of plum jam, brown sugar, tablet and cinnamon. The palate shines with dates, apricots and roasted, spiced chestnuts, followed by sticky apple pie. The finish is medium long with spices, honey and caramel. This one is an autumn/winter warmer!

Lindores Casks of Lindores 2 Bourbon Cask
$57.00 Availability: In StockThe first expression in the new series from the home of whisky, Cask of Lindores 2 Bourbon Cask is made with local barley, and has been aged in ex-bourbon casks. Bottled at a cask strength of 49.4% abv.
Expect aromas of apple, banana, pear and vanilla, with buttercream and caramel. The palate is full of more apple flavours, with lemon, oak, coffee beans and spicy peppery touches. A medium length finish.

Aromas of dates, milk chocolate, vanilla and molasses lead to a palate of spicy ginger and cinnamon with dried fruits and walnuts.

$72.00 Availability: In StockThis rare UK-exclusive single cask release from Lindores Abbey Distillery showcases the Lowland single malt in a distinctive Ex-Rum Peated Cask. Filled in 2019 and bottled in 2025, Cask 385 has yielded just 231 bottles at a robust 59.1% abv, with no chill filtration and no added colouring.
The nose reveals soft peat smoke entwined with a hint of sea breeze and subtle maritime notes. On the palate, toffee apple and muscovado sugar give way to delicate floral tones and a warming cinnamon spice, underpinned by earthy peat and a savoury coastal character. The finish lingers with gentle smoke and light toffee, making this an elegant yet quietly powerful dram for those who appreciate rarity and craft.

Lindores Friar John Cor Chapter 1
$73.00 Availability: In StockIn 1494 Brother John Cor, a Lindores monk, was commissioned by King James IV in 1494 to turn 8 bolls of malt into Aqua Vitae – the first recorded distillation in Scotch history. The Friar John Cor – Chapter 1, was matured in a combination of Bourbon, Monbazillac, STR, and Sherry casks. The introduction of the Monbazillac casks gives a sweetness and complexity which perfectly compliments the classic Lindores style. Bottled at a cask strength of 60.2% abv and free from chill filtration.Â
On the nose we find notes of ripe bananas, apricots, apples and peaches along with honeycomb and fresh pastries. The palate is full of flavours of rich dates, spicy cinnamon, fig, blood orange, nutty almonds and waves of vanilla. The close is medium to long, with more complimentary fruit and nut flavours.

Bottled at 60.2% abv, this mahogany-hued whisky opens with aromas of vanilla, treacle, honey, and orchard fruits. On the velvety palate, we find ripe pear, roasted banana, mixed spice and caramelised nutty almonds followed by more earthy peat and a hint of coastal air. A long lasting finish of plenty character.

The liquid was carefully matured in Old Forester Bourbon casks, Rejuvenated Wine Barriques, and the unique Thiron Virgin Oak cask, with the Thiron casks being specifically commissioned and hewn from locally harvested oak.
Bottled at 49.4% ABV, you can expect a nose of luscious notes of ripe dates and berry jam unfold, complemented by the warmth of toasted hazelnuts and a gentle sprinkle of sweet cinnamon. The palate is indulgently smooth, revealing layers of mellow vanilla ice cream drizzled with golden syrup, fresh raspberries, and delicate pastry.
