Highland Park Valfather

Celebrating the island’s 600 years of Norse rule, this limited edition series was created in collaboration with Danish desinger, and true Viking soul, Jim Lyngvild, with each of the whiskies hand-selected by Master Whisky Maker Gordon Motion. Valfather has been crafted with 100% refill casks and bottled at 47% abv.
The nose is fruity, with crisp apple and sweet pear notes. The palate brings creamy vanilla and creme brulee with toasted cedar wood and a touch of paprika spice, before a long and floral finish with wisps of Highland Park’s heather peat smoke.

Highland Park Valknut

Valknut takes its name from the Norse symbol of three interlinked triangles, meaning ‘knot of those killed in battle’, which was placed upon fallen Viking warriors before they would be spirited away to Valhalla to join Odin’s army. Highland Park Valknut has been matured predominantly in sherry seasoned American oak and used a small amount of Orkney-grown Tartan barley, which adds a smokier edge to the character.The nose has toasted vanilla, cracked black pepper, cloves and aniseed with an aromatic smoke. The palate is sweet with aromatic cloves and tangy aniseed hints. The finish is incredibly balanced, with lingering peat smoke and sweet spice. -

Expect notes of citrus zest and dried apricots, summer jasmine and lavender, scorched vanilla fudge, sherried raisins dusted with cinnamon, fragrant violets, crushed fennel and coriander seeds, aromatic peat smoke.

The expression was distilled in December 1984 and spent 37 years maturing in a single refill American hogshead before being bottled in December 2021. The result is a delectably sweet and fruity dram. Just 116 bottles have been filled at 46.3% abv.
Aromas of fresh apple, lemon juice, and fresh orange peel. The citrus flavours continue in the palate alongside notes of mango and papaya. Hints of apple return in the spicy and smoky finish.

“The graceful off dry bouquet is of ripe fruit with floral estery notes, almost Speyside like. I was expecting more smoke on the nose, however, I got the heather and the marine freshness with the Island sea breeze salient which is a Highland Park keynote. The peat will emerge more on the palate than on the aroma. It’s a classic bouquet and I always get the peach and apricot overture that HP delivers with style. Malted barley, heather, crème caramel with just a hint of Oloroso rise off the shoulders of the oaks, both American and Spanish.Â
On the palate the warmth of the peat fire embers is evident. Smouldering gently bringing a flush to the cheeks and a sparkle to the eyes. This is the stuff of whisky making genius, because whisky from anywhere doesn’t come better than this. The aftertaste is one of smoke and honey with just a teardrop of lemon juice that lingers on the palate slowly disappearing like a sunset on Kirkwall Bay. I love it!”

On the nose, expect wilde berries, honeycomb, and fresh cinnamon. The palate is full of millionaire shortbread, toasted marshmallows, and a subtle hint of fresh honey. These flavours melt into warm vanilla and fresh pineapple in the finish.
