Description
The rare agave Cenizo grows wild on the steep hillsides of Durango, Northern Mexico for 15 long years, before it is ready for harvesting. This mezcal is made using the traditional artisanal process of an earthen pit for cooking the agave, a tahona for milling, with fermentation using natural yeast and distillation in small batches using wooden stills. Whether sipped neat or mixed in cocktails, Cenizo Mezcal is a spirit that celebrates tradition and offers a taste of the rich culture and heritage of Mexico.
Aromas of tropical fruits, rich honey and earthy oak on the nose lead to a rich palate of papaya and elderberries notes. The finish is subtly spiced, with touches of black pepper and caramelised green pepper.
