Scotland’s first 100% community-owned distillery, powered by renewable energy and driven by a commitment to local good, GlenWyvis presents ‘The Drover’ – part of the Highland Legacy Series celebrating Scottish history.
Distilled, matured, and bottled in Dingwall, the release was matured in a carefully chosen combination of first fill Sauternes barriques, Madeira hogsheads, bourbon barrels, and Oloroso hogsheads.
Bottled at 46.5% abv, it offers a nose of stewed pears, boiled sweets, fresh walnut, and buttery crumble. The palate follows with cocoa nibs, bright orange zest, crisp apple, and a lively touch of pepper. The finish is long and nutty, developing from dark chocolate and bitter almond into a refreshing note of green apple.
