    The Balvenie Single Barrel First Fill has been aged in a first fill, ex-bourbon cask for at least 12 years. Almost all Scotch Whisky is matured in casks previously used by Bourbon distillers. When brought to Scotland and used for the very first time they are known as ‘First Fill’. The Malt Master samples the aged whisky, cask by cask, and selects only those characterised by sweetness and subtle vanilla oak to be bottled as The Balvenie Single Barrel First Fill. Each bottle is one of no more than 300 drawn from a single cask and each is hand-numbered and carries the number of the cask in which it matured.

    ‘The Balvenie Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish the Malt Master filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie.’

Pineau is a fortified wine made from the unfermented grape juices with Cognac eau die vie added before its maturation.

    To craft The Balvenie DoubleWood 17 Year Old, the Malt Master returned to one of his most celebrated achievements – consecutive maturation in two different types of cask, a process often referred to as ‘cask finishing’. This technique is at the heart of The Balvenie DoubleWood – it sees the whisky matured first in American oak barrels, which impart soft sweet vanilla notes, before being transferred to European oak sherry casks, where the second cask ageing adds rich spicy flavours and a depth and fullness of flavour. The DoubleWood 17 Year Old is an elder sibling to DoubleWood 12 Year Old and shares its honeyed, spicy characteristics, but it is distinctly different, with a striking richness and complexity.

    The result is a quintessential Balvenie, with honey, malt, vanilla, and green apples on the nose. Smooth and extremely easy to drink, the palate majors in dried fruits, vanilla and spices. The finish is medium to long, with more honey and vanilla, plus aniseed and warming oak. This is an excellent example of why it pays to trade up from a 12 year old single malt.’

Distilled on 8th March 1971 and filled to a European oak Oloroso sherry butt to mature for the next 47 years, Malt Master David C Stewart said this expression “is representative of the time we were experimenting to release The Balvenie as a Single Malt and releasing Founders Reserve 8 Year Old.”The nose has exotic spices and dark fruits dusted with brown sugar. The palate is rich and deep with honeycomb and oak layers, before dried fruits and malty sweetness in the finish.

    The nose opens with soft autumn fruits, honey, crystalised ginger, and rich oakiness. The palate has bold vanilla with more oak presence, fresh fruits and cinnamon apple tart, ending in a long, lingering sweetness.

    This 25 year old expression completes The Balvenie Single Barrel range.

    As with the other expressions in the range, each barrel is unique and is personally selected by The Balvenie Malt Master, David Stewart, to ensure that the individual characteristics imparted by that barrel also reflect the classic Balvenie style of rich, honeyed sweetness and subtle spice.

    The whisky remains non-chill-filtered and each barrel produces no more than 300 hand-numbered bottles, with the label stating the distillation date, bottling date and cask number.

    This has been drawn from a single cask, described on my sample bottle as ‘single barrel traditional oak’, which I guess means a refill American Standard Barrel, (ex-bourbon, with a capacity of aproximately 200 litres).

    Pale gold, thick legs. Malty porridge, bruised pears and candlewax on the nose, which is also lightly prickly to start with – surprising for this strength. The taste starts very sweet and dries elegantly, with fragrant peppery spice lingering in the aftertaste. Water softens the texture, and reduces both sweetness and spice

    Scientific understanding of the chemistry of oak wood and of what is happening during maturation is relatively new, simply because before the 1970s the scientific techniques for exploring such matters were unavailable. Chemists now talk about ‘cask activity’, and believe the wood performs three crucial functions, described as ‘subtractive’ ‘additive’, and ‘interactive’.

    Subtractive effects

    In order to be bent into a barrel-shape, the staves must be heated, and heat performs the vital function of altering the chemical structure of the inside surface of the cask. European casks are ‘toasted’ to bend them into shape; American casks are flamed once they have been made, so their inside walls are charred as well. The benefits of charring were probably discovered accidentally: carbon acts as a ‘purifier’, removing ‘immature’ characteristics and extracting undesirable compounds from the new spirit. Since European casks do not have a heavily charred interior, their subtractive activity is not as pronounced as American casks.

    Additive effects

    Oak contains hemicellulose (which caramelises when heated, adding sweetness and colour), lignin (which, like hemicellulose, degrades when heated to produce vanillin and coconut flavours) and tannins (which produce astringency, fragrance, delicacy and colour). As might be imagined, a brand-new cask is much more active than one which has been filled before, so almost all Scotch whisky casks are ‘seasoned’: they have been used previously for maturing bourbon (mainly) or other spirits, sherry or other wines. The first time they are filled, there may be residues of the previous incumbent – Bourbon, sherry, etc. – lurking in the walls of the cask, but the most obvious additive effect is colour. European oak, being more tannic, lends its contents a deeper hue than American wood. The degree of colour depends upon how often the cask has been filled, but as a general guide, European oak hue runs from ‘old polished oak’ to ‘young mahogany’, while American oak hue is all gold: 18CT through to 9CT (deep amber to pale straw).

    Interactive effects

    Oakwood is semi-porous, which allows the contents of an oak cask to ‘breathe’ and interact with the air outside. This leads to oxidation, which removes harshness, increases fruitiness and enhances complexity. The spirit is said to ‘breathe’ through the wood, and over the years it generally loses both volume and strength. The interaction between the wood and the atmosphere is the least understood of the mechanisms of maturation, and some say the most important. It is also the mechanism most affected by the micro-climate of the warehouse in which the cask rests during maturation. Heat, humidity and atmospheric pressure all play a part. This expression of The Balvenie has been filled into relatively inactive refill casks, the first (c.4567) into European oak, the other two into American oak. Their idiosyncratic flavours owe a great deal to the interaction between the spirit and the atmosphere of warehouse 24: unique flavours which can only be developed by time.

    The third installment of The Balvenie Fifty: Marriage series. Showcasing The Balvenie’s malt master David Stewart’s rich knowledge and unique skill, this is a rarely attempted marriage of the most precious, most mature stocks in The Balvenie Distillery. David’s latest achievement, this incorporates new casks from the five used in the Marriage 0197, released in 2019. The final liquid is bottled at 46% abv, and is free from chill filtration and colouring. A marriage of seven casks of varying degrees, the casks comprise both American and European Oak.

    Every bottle of The Balvenie Fifty: Marriage 0614 is presented in a luscious wooden canister, created using elm trees found at the grounds of The Balvenie Distillery. It also includes a gold-plated certificate and bottle glorifier, inscribed with the full array of tasting notes.

    The nose has deep dark spices, rich fruit cake, elegant oak, and sweeter aromas of dried fruits, raisins, ginger, and sultanas. The palate is rich and lush, with bitter chocolate, hints of honey and intense spice. The finish is rich and mouth coating with sweet and oaky spiced notes.

    From The Balvenie’s Stories Collection, which pays homage to the whiskymakers and craftspeople behind the dram by bringing their stories to life, A Collection of Curious Casks celebrates the friendship and collaboration between Malt Master Kelsey McKechnie and Sampling Lead, George Paterson.

    Initally set aside to become a Single Barrel 12, a subtle smoky flavour was detected without any peat being used, and so the whisky was granted a 14-year slumber in American bourbon casks. Bottled at 47.8% abv.

    Velvety sweetness on the nose, alongside aromas of rich toffee, smouldering oak, crisp citrus and ever flowing honey musk. On the palate, candied orange peel is grounded in woody, earthy flavours from beautifully roasted malt and deep vanilla oakiness.
