Holyrood Arrival Inaugural Release
$75.00 Availability: In StockMade by challenging the norms of Scotch whisky and taking inspiration from Edinburgh’s craft brewers, Holyrood distillery are proud to present their inaugural malt whisky. Made using traditional Scotch pot still malt and distilling yeast, and matured within a combination of Oloroso butts, Pedro Ximenez hogsheads, bourbon barrels and rum barriques, the expression is limited to just 8,188 bottles. Presented at 46.1% abv.
Expect aromas of tropical fruit, raisins, butterscotch, freshly baked bread and hints of soft leather. The palate brings sweet and spice together, boasting toffee, vanilla, digestive biscuit, tablet and ginger spice flavour, with only a hint of savoury salinity. A long and mouth-watering finish full of apple pie and sweet spice completes this impressively smooth young whisky.

Holyrood Chocolate Malt New Make Spirit
$33.00 Availability: In StockAnother first-rate expression from Holyrood Distillery. This one uses a combination of malt, some of the Pot Still Distiller’s Malt and some of the Chocolate Malt. The result is a rich, complex dram totally unlike most malts you can buy. Filled at a strength of 60% abv, this is a very punchy number.
Fruity, malty aromas arise on the nose, and continue in the palate alongside rich chocolate. This velvety chocolate lingers in the finish, in a sharp, cleansing exit.

Holyrood Gin Height of Arrows

This is distilled by local whisky makers, who want the translate the whisky experience into gin. They believe in stripping back gin to its core essential, juniper, and only focusing on a select few botanicals. At 43% abv, this has surprising depth and complexity.
Expect juniper to shine, with a certain dryness in the palate accompanying beeswax, and a lingering note of sea salt in the finish.

$40.00 Availability: In StockHolyrood Distillery’s new make spirit series celebrates Edinburgh’s history of distilling, and this punchy number draws on a number of influences. It combines Crystal and Chocolate malts alongside its own malt in the mashbill, and takes the curious step of adding Edinburgh Ale yeast to its own. The result if a multi-faceted, hearty expression with layers of flavour.
You can expect a hearty aromatic presence of chocolate to accompany crisp, dry notes. These flavours combine in a refreshing, lip-smacking finish.
