Bottled at 40% abv, you can expect a nose of fruit and florals, a palate of dark chocolate with dried fruit and hazelnut, and a finish of warm dried fruit with nut flavours.

Bushmills 1991 31 Year Old
$2,100.00 Availability: In StockExclusive to The Whisky Shop in the UK, this ultra-rare Bushmills 31 Year Old whiskey has been initially matured in Oloroso and bourbon casks, before being finished in rare first and second-fill Madeira casks for 18 years. Launching in celebration of St Patricks Day, this is one of the most limited, small batch single malts ever created at The Old Bushmills Distillery. The unique release is only available in select markets, with just 12 bottles available in the country.
Beginning with enticing aromas of dried fruits, marmalade, warm cocoa, black coffee and walnuts, the palate leads to sweet mandarin orange flavours, alongside peach, honey and gentle waves of oak. Gentle spice, roasted nuts and raisin flavours develop, before a dry and long fruity finish with nutty praline creaminess giving an exquisite mouthfeel.

Bushmills 2000 Ruby Port Cask The Causeway Collection
$260.00 Availability: In StockThis single malt is a Bushmills 2000 Port Cask single malt whiskey. This dram had a hefty 20-year-long slumber in Portuguese first fill ruby port wine casks. Undergoing a classic triple distillation in November 2000, this was then bottled in 2021 at a cask strength 54.1% abv. It is also from chill filtration and artificial colouring. The Causeway Collection is a celebration of Bushmills rarest and most special casks, gaining inspiration from the Giant’s Causeway that is just down the road from the Old Bushmills Distillery. And this dram is just as grand as you would expect.Â
The nose is full of juicy raspberry, plums, and dry grapefruit. More red fruits are present on the palate, with strawberry headlining next to caramelised toffee, chilli, and allspice. The finish is sweet, spicy, and lingers delightfully.

This expression contains single malt finished in double-charred American Oak barrels, blended with ultra-smooth triple distilled grain whiskey. The result is a fresh, creamy whiskey that gives deep oaky notes.
On the nose, accents of honeycomb, biscuit, and warm wood sweetness arise with vanilla scents. The taste is rich yet mellow, the double charred maturation process imparting notes of Crème brûlée, toffee apple, and vanilla. The finish is deep, smooth, and leaves lingering notes of maple syrup and oak.
