Description
We are always excited to be able to announce a single malt exclusive to The Whisky Shop. Distilled in 2008 at the Highland Park Distillery in Orkney, this spent 13 years slumbering in oak casks, to then have its maturation finished with a flourish in an octave cask. This cask is 1/8th of the size of a regular sherry butt. What this does increase the intensity to which maturation occurs, packing in as much flavour as possible in a shorter time than usual. Only 65 bottles have been made, all from a single cask. It comes at a punchy cask strength 53.6% abv and is free from chill filtration and artificial colouring. Bottled by Duncan Taylor, this is part of the renowned Octave Series.
On the nose one can expect sweet sherry notes, and chocolate. The palate is filled with dark chocolate, sugar, and sea salt. These flavours combine in a wonderfully complex finish, that also gives a subtle note of liquorice. Filled with hidden greatness, it may be an idea to add a drop of water to unlock some of the more subtle flavours.
